Easy, Sort of Spicy (optional), Tomato Soup

This is one of the most delicious soups I have ever made.

I made it on a rainy day (doesn't happen often around here). I delicious hearty soup sounded amazing. I had never made tomato soup before. And wanted to experiment.

The Spicy piece was sort of an accident since I grabbed the wrong can of diced tomatoes at the very small local market that day. But to my surprise, it made it so incredible and flavorful, even the kids loved it. Though, if you want no spice, replace the tomatoes with chilis, with a can of just diced tomatoes!


Hope you enjoy this like we did! Paired beautifully with a toasted cheese sandwich and topped with fresh basil and scallions!


It definitely made a TON. We ate half and then froze the other half that we will eat on the next rainy day!



 

· 2 Cans diced tomatoes

· 1 8oz. can (or homemade) chicken stock

· 1 Can diced tomatoes with green chilis (or just use another can of regular diced tomatoes If you do not want spice!)

· 1 can tomato sauce

· 1 can roasted red peppers

· 3 T Butter

· 3 T olive oil

· 4 T garlic

· ¼ C diced onion

· 1 t. Oregano

· 2 t. chili powder

· 2 t. paprika

· 2 t. basil

· 2 t. salt

· 2 t. pepper

· 2 Cups ½ & ½ room temp


Directions


Warm butter and olive oil in a large pot.

Add in onion and garlic to warm oil, add spices, cook for a few minutes to allow the seasonings and spices to bloom.

Add in the rest of ingredients (except ½ & ½) simmer for about an hour to hour and a half.

Use immersion blender to make smooth, to your liking. If you do not have an immersion blender, you can pour it into a blender and blend that way then pour back into the pot. Though and immersion blender is much easier.

Add in room temp ½ & ½ SLOWLY WHILE STIRRING.

Serve with a toasted cheese sandwich, some fresh basil and scallions on top!
